    Australian Oxo is a Contender ! Unless I am Mistaken in the Video the Meat Came from a Dairy Cow Usually Dairy Cows are Old When Slaughtered After there Utters are Dried up and are not Considered a High Quality Beef Go Figure Never new they made the best steak in the world !.

    Ok, this guy has awards for his meat and I do not. That being said… I’m a big fan of resting meat up to any temperature past “raw.” I would definitely try it, but I like internal connective tissues and fat to render down. I don’t know if that chop had enough time on the grill for that to happen. He’s also using beef from dairy cows. At least in the US, where I’m at, that’s hard to come by. I use it whenever I can, because it’s FAR superior in taste and texture. Try it if you can find it. I also understand that part of his philosophy is to keep it simple. Cool, cool, but I want my chimichurri! I would still eat the hell out of that.

    Unless the customers ordered it that way, some of that steak particularly on the sides still looked raw. I have eaten in many restaurants and I grew up in New Orleans which is known for its fine cuisine I have yet to eat a steak anywhere that I could say is the best I've ever eaten. My dad grilled ribeyes out back that were as good as any anywhere else.
